Salmon

Salmon is one of the most important fish species produced in aquaculture and is also one of the most popular edible fish in Germany. In 2018, around 2.4 million tons of salmon (Salmo salar) were produced worldwide (FAO, 2020). The most important salmon producers include Norway, Chile, Scotland and Ireland (FIZ, 2020).
Typically, reproduction as well as hatchery and stocking fish rearing takes place in freshwater-operated recirculating systems, whereas salmon in the fattening stage mature in net enclosures in seawater.
